When I was a child, one of the recipes I was looking forward to the most was this chocolate salami recipe. It is one of those desserts I grew up with. My mum used to make it often when I was a child. Let’s be honest: it is easy to make, extremely tasty, and perfect for any occasion.
When I got older, I started making it by following the same recipe my mum used and I became the expert on it. From then on, whenever we needed to make it for any occasion, I was the one in charge.

Some days ago we were celebrating a birthday in our family and we thought to make this delicious chocolate salami. As it is an Italian dessert, it’s not common to have it in Finland, so we knew it would be extremely appreciated. And yes, we were 100% right!

The origin of chocolate salami (salame di cioccolato)

This dessert does not have clear origins. What we know for sure is that it was included in the list of Sicilian typical products by the Italian Ministry of agricultural, food, and forestry policies. A way to indicate it in Sicily is Salame turco, where turco stands for Turkish. This doesn’t have anything to do with the origin of the dessert but rather, originally, it was used to refer to its color. The term is often used in the region.

It is also true that this dessert is extremely well known in other regions of Italy. For instance in Piedmont is it called the Pope salami. The reason is that a very common expression in Italy is “to live like a Pope“, meaning that your life is comfortable. The same applies to the food you eat.

This dessert is not only common in Italy, though. In fact, chocolate salami is well-known in another Southern European country: Portugal. The main difference is in the liquor that is used. While in Italy, rum is the main choice, in Portugal they use port wine.

There are some other international variants as well. As happens for many dishes, they easily spread around the globe, and each country, with its own traditions, creates different versions of them. The recipe you find here is the original Italian one!

Italian chocolate salami recipe

Ingredients

No need to say that this chocolate salami recipe does not have anything to do with the real meaty one, except for the shape. It does not have meat so it is completely vegetarian.

The ingredients, as said, are very easy and basic: butter, eggs, sugar, cocoa powder, and rum. In Finland, when it comes to alcoholic beverages in desserts, it might get a bit tricky but most likely you will find what you need from the Alko store close by. You only need to spend more than in other countries due to the higher taxation and state monopoly of alcohol.

How to make it and tips

Making this chocolate salami recipe is very easy. You need to be extra careful when adding the rum, as if added too much, it will ruin the taste of the entire dessert. For this reason, we suggest you add one teaspoon per time and taste it constantly after mixing. This will make it easier for you.

The eggs must be extremely fresh as this is not a cooked dessert. This means that you will be eating uncooked eggs. If you further want to keep the dessert in the fridge for some more days, you will need to pay even more attention to this.

Rum is the most common liquor used. This said, in Portugal, they use port wine and we know people who even use different liquors: for instance, Cointreau. This one has an orange flavor, which surely does not fit badly with chocolate.

After finishing with the ingredients, be ready to shape it like a real salami. The trick is to place all the batter on baking paper and roll the paper around the batter until round. My shape has never really resembled a perfect salami, but honestly I do not pay extra attention to it. You will cut it into slices before serving and it serves the purpose. If you are a master in perfection, feel free to make a perfect chocolate salami shape.

Speaking of chocolate, have you realized that the chocolate salami does not have chocolate on the ingredient list? In fact, despite the name, the ingredient list contains only cocoa. If you wish, you are free to replace it with dark chocolate, but the most common version is with cocoa.

How to store it

If you are unable to finish your chocolate salami the day you make it, you can easily store it in the fridge. When kept in the refrigerator, it stays fine for some days. As said earlier, pay extra attention to the eggs you use as they are not cooked. Use baking paper to wrap and cover it completely so that it is not exposed.

If you wish to store it in the freezer, we recommend you cut it into small slices and place them on baking paper, so that you will be able to take as many slices as you want based on your need.
Otherwise, feel free to place the entire chocolate salami in the freezer but when doing this, please remember to take it out many hours before serving so that it will have time to thaw without using any microwave or oven, which we really don’t recommend you use. You can cover it in powdered sugar once it has thawed.

Ingredients
 
 

  • 250 grams digestive biscuits
  • 200 grams butter
  • 2 eggs
  • 200 grams sugar
  • 100 grams cocoa powder
  • powdered sugar
  • 2.5 teaspoons rum

Instructions
 

  • Crush the biscuits into small pieces.
  • Whisk sugar and eggs until well mixed.
  • Add cocoa powder and the softened butter and mix until well-combined.
  • Add the crushed biscuits and work the batter with your hands.
  • Add 2-3 teaspoons of rum.
  • Roughly shape the salami and place it on a baking paper.
  • Roll the baking paper around the salami until completely covered. Roll on the working surface until the shape is round.
  • Let it rest in the fridge for 12 hours or more.
  • Cover in powdered sugar before serving.

Notes

  • To crush the biscuits, we usually fill a freezer bag with them and crush them with a rolling pin.
  • When adding the rum, taste after each teaspoon and decide the amount based on your taste.
  • You can cover it with cocoa powder instead of powdered sugar if you wish.
