Easy fried rice

Easy fried rice is a rice dish made with several other ingredients. It is usually made to use the leftover rice (and other ingredients) from the previous days. Fried rice is commonly eaten in East Asia and Southeast Asia, in addition to being a common dish in Malaysia and Indonesia.

As this dish contains leftover food, you can have many different alternatives. In fact, varieties are many and you can feel free to add/remove ingredients as you please!

History of fried rice

The first evidence of the dish traces back to the Sui dynasty, (589–618 CE), while the spreading of the stir-fry dish only occurred during the Ming dynasty (1368–1644 CE).

As said, the dish is made from leftovers. Chinese usually eat plain rice to accompany meat and vegetables but this dish has gained popularity over time to avoid wasting food, particularly for all the other ingredients that can be used. In fact, there are so many alternatives to bring flavor into your fried rice. In this recipe, we provide one delicious alternative.

Varieties in the world

Because of its simplicity and the fact that has spread very easily around the world, this dish has many different local varieties. We will list some to mention a couple of examples:

  • China is known for more tha one varities. In fact they have the Yin Yang fried rice, where they use two sauces, that usually are a savory white sauce and a tomato-based sauce. Also, they make a version called Yeung Cho, which contains shrimps, scrambled eggs, and pork.
  • In Singapore, a common version is the Sambal fried rice, that contains fried rice made with sambal. This is a condiment based on shrimp pasta and chilis.
  • In India, where curry is one of the most loved and used ingredients, the classic version contains this spice.
  • In Sir Lanka, instead of Chinese rice, it’s common to use Basmati rice, that comes from India, Nepal and Pakistan. Also, they add local spices to flavour the dish.

Many other variations exist in the world. For instance, in Europe it’s pretty common to add oyster sauce in the mix of ingredients (like we did).

How we made this easy fried rice

This recipe is simple, as the tradition wants it. As it is made from leftover food, it does not take too much time. The ingredients we used are pretty find to easy. Normally, you would use leftover rice. However, if you don’t have leftover rice and want to eat the dish the same day when you make the rice, it is absolutely possible. Follow our recipe for a good way of making rice, including portion sizes, here. Just remember to cook the rice early enough to let it cool before cooking. That step really improves this easy fried rice dish.

In addition to the rice, we cooked eggs, and then added onion, scallion greens, green beans, and carrots. For vegetables, you don’t need to use these exact ones; anything with varying texture works well with this dish. We seasoned the dish with ginger, garlic, pepper. When it comes to sauces, we used oyster and soy sauce.


Being Italian, easy fried rice reminds me of what we do with leftover pasta. We cook it the day after with butter in a frying pan. It usually occurs when making huge portions of baked pasta. Ingredients
  

  • 2 tablespoons butter
  • 1 egg
  • 1 teaspoon vegeterian oyster sauce
  • 2 tablespoons soy sauce
  • 0.5 teaspoons ginger
  • 2 cloves garlic
  • 0.5 small onion
  • 1 carrot
  • green beans
  • scallion greens
  • pepper
  • 0.5 tablespoons sesame oil

Instructions
 

  • Cook rice, following a recipe here for portion sizes, if not using old rice. Heat 1/4 of the butter in a pan. Add in the egg and cook until scrambled. Remove the egg onto a plate.
  • On the same pan, add another 1/4 of the butter over medium-high heat. Add chopped carrots, onions, and green beans. Also add minced garlic and ginger. Season with pepper. Cook for about 4 minutes.
  • Increase heat to high. Add the rest of the butter. Add rice, scallion greens, soy sauce, and oyster sauce. Stir well. Cook for 3 minutes occasionally stirring.
  • Remove from heat and add the egg. Mix well and add sesame oil. Taste and add more oyster sauce or soy sauce if necessary.
  • Serve immediately.
