Mojito is a typical alcoholic drink from Latin America, precisely from Cuba. It is considered a highball because, like rum and cola and seven and seven, the alcoholic base spirit is mixed with a larger portion of non-alcoholic ingredients. This recipe is for sugar-free refreshing summer mojito!
Cut the lime half into four wedges. Using a mortar and pestle, crush the mint leaves and 1 lime wedge. Add 2 more lime wedges and the sweetener. Crush and mix to dilute the sweetener into the juice. (You don't need to crush the leaves completely. It is enough to gently crush the leaves to release the mint oils.)
Pour the mixture, with all the crushed mint leaves and lime wedges. into a glass. Fill with ice almost to the top.
Pour the rum and fill the rest of the glass with sparkling water. Stir and taste. You can add more sweetener if you prefer.
Garnish with the remaining lime wedge and some mint leaves. Serve immediately.
